Ingredients:
- 800g minced beef
- Chicken stock or chicken stock cubes
- 5 potatoes
- 1 sweet potato
- 50g mushroom
- 50g green bean
- 1 zucchini
- 2 carrots
- 1 parsley
- 5-6 pickled cucumbers
- 1 lemon
- 200ml sour cream
- 2 tsp capers
- Salt and pepper
- 1 tsp apple vinegar
- Fresh rosemary
- Fresh tarragon
- 1 tsp chilli pepper or powder
- 1 tsp dry oregano
- 3 bay leaves
- 1 smaller red onion
- 2 cloves of garlic
- Olive oil
- 100g grated cheese
- 1 celery root
In a big pan start to cook the cut onion with oil and salt then add the minced meat.
When the meat is white add the crushed garlic, cut potatoes, carrots, celery root, and green beans.
Add the chicken stock and rosemary, tarragon, oregano, salt, pepper, bays and the chilli pepper.
Add 100ml cucumber juice and the capers and cook for one hour.
In the last ten minutes add the mushrooms, zucchini, and the pickled cucumbers.
Put the sour cream in a blender with lemon juice, apple vinegar, and chicken stock and add it to the soup.
Wait until it starts to boil again and it’s ready.
I put cheese on the plate first when serving then I add the soup.
