<\/li><li>100ml white wine and water<\/li><li>Olive oil<\/li><\/ul>\n\n\n\n<h3 id=\"preparation\" class=\"wp-block-heading\">Preparation:<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Score in the skinned side of the meat and tie string around the roast.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put it in a deep large pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour in olive oil and add salt and pepper on both sides of the meat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the wine and the water in the pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cover it with double aluminium foil and cook for 5-6 hours on 150 degrees Celcius.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When the meat is ready pour the drippings in a bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put the meat back in the oven until the skin is red and crispy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put it on a cutting board and cover it for 30 minutes.<\/p>\n\n\n\n<h3 id=\"ingredients-for-the-gravy\" class=\"wp-block-heading\">Ingredients for the gravy:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Drippings<\/li><li>2 tsp arrowroot powder<\/li><\/ul>\n\n\n\n<h3 id=\"preparation-2\" class=\"wp-block-heading\">Preparation:<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the drippings in a pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a small bowl put the arrowroot powder with a little bit of water and mix it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour in the drippings and cook slowly.<\/p>\n\n\n\n<h3 id=\"ingredients-for-the-purple-cabbage\" class=\"wp-block-heading\">Ingredients for the purple cabbage:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>1 purple cabbage<\/li><li>200g Brussel sprouts<\/li><li>Salt and Pepper <\/li><li>1\/2 tsp cumin<\/li><li>Sweetener<\/li><li>3-4 tbsp rice vinegar<\/li><li>Olive oil <\/li><\/ul>\n\n\n\n<h2 id=\"preparation-3\" class=\"wp-block-heading\">Preparation:<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Put the cabbage and the Brussel sprouts in a food processor and grate\/chop.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a pan start to heat up the oil and add the cabbage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add salt, pepper and cumin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook slowly then add sweetener and keep stirring.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour water on the cabbage if needed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When the cabbage is soft stop cooking and add the rice vinegar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stir well and taste if you need to add more salt or sweetener.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When serving, pour the gravy on the meat and add the cabbage as the side dish.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure
