{"id":525,"date":"2020-01-20T09:22:07","date_gmt":"2020-01-20T09:22:07","guid":{"rendered":"http:\/\/katislife.sumo.a2hosted.com\/?p=525"},"modified":"2020-01-20T09:22:09","modified_gmt":"2020-01-20T09:22:09","slug":"low-carb-carrot-cake","status":"publish","type":"post","link":"https:\/\/www.katislife.com\/en\/2020\/01\/low-carb-carrot-cake.html","title":{"rendered":"Low Carb Carrot Cake"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><em>Bake in a 22cm round cake pan<\/em><\/p>\n\n\n\n<h3 id=\"ingredients\" class=\"wp-block-heading\">Ingredients:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>4 eggs<\/li><li>2tsp vanilla aroma<\/li><li>Stevia<\/li><li>100ml sugar free maple syrup<\/li><li>Salt<\/li><li>2tsp pumpkin spice<\/li><li>1tsp nutmeg<\/li><li>2 cups almond flour<\/li><li>2tbsp coconut flour <\/li><li>1tsp cream of tartar or bicarbonate of soda<\/li><li>1 pack of baking powder<\/li><li>2 cups of filed carrots<\/li><li>1\/3 cup olive oil<\/li><li>80g butter<\/li><li>1\/2 cup walnuts<\/li><li>2 oranges<\/li><li>500g mascarpone or cream cheese<\/li><li>50g butter<\/li><li>1\/3 cup whipped cream  <\/li><\/ul>\n\n\n\n<h2 id=\"instructions\" class=\"wp-block-heading\">Instructions:<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pre heat the oven to 180 degrees. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put baking paper on the bottom of the cake pan. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Grate the carrots and cut the walnuts.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Melt the butter. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put the dry ingredients and the wet ingredients in different bowls. Then mix them together and add the carrot and the walnut.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put the dough in the cake pan and make it level.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bake in the oven for 45 minutes then leave it to cool down.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">While it cools down I make the orange jam.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Peel the oranges and cut them to small pieces. Put them in a pan add 2-3 tsp water. Add a pinch of salt, stevia, 2tsp maple syrup, and 1\/2 tsp pumpkin spice then cook slowly for 10-15min. Once cooked leave this to cool down as well.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When the caked cooled down I make the mascarpone cream.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put the butter in a bowl with the cream cheese, stevia and vanilla aroma and mix with blender then add the whipping cream.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When it\u2019s ready you can fill the cake.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cut the cake in half, put half of the the cream in the middle and then add the jam and the cut walnuts. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put the rest of the cream on the outside of the cake and sprinkle with minced walnut. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leave it in the fridge for one
