Ingredients for the sponge
- 4 eggs
- Pinch of salt
- Sweetener
- 2 tbsp cocoa powder
- Milk
- 6 tbsp almond flour
- Half pack of baking powder
- Vanilla extract
- 22cm cake pan
Preparation:
Preheat the oven to 180 degrees Celcius.
Separate the eggs and beat the egg whites.
Add the rest of the ingredients to the egg yolks and mix them together.
When the mixture is smooth add the egg whites.
Mix them carefully together.
Put baking paper in the cake pan and grease the sides with butter.
Pour the pastry in the pan and cook for 15-20 minutes.
Then let it cool down and cut it in half.
Ingredients for the filling:
- 70g 80% dark chocolate
- Sweetener
- Vanilla extract
- 1 pack of mascarpone
- 200ml cream
Preparation:
Beat the cream with stevia.
Mix the room temperature mascarpone with stevia, vanilla extract and mix with a blender.
Put the chocolate in a heatproof bowl.
Place bowl over a saucepan of simmering water.
Then add the chocolate to the mascarpone and stir together.
Add the beaten cream to the mascarpone.
Put filling on one of the sponges then put the other one on the top and add the rest of the filling to the top and sides.
Put it in the fridge for a night.
