Orange Duck for Easter

Ingredients for the duck:

  • 1 duck
  • Salt and Pepper
  • 2 fresh rosemary
  • 1 orange
  • 2 anise star
  • 1/2 tsp ground cloves or 4 whole cloves
  • 1 smaller cinnamon stick

Preparation:

Wash and clean the duck.

Use a shashlik stick or a big needle for the meat and pierce it through the skin on the duck.

Put the duck in a big bowl and cover it with hot water for ten minutes.

Then take out the duck and dry it.

Pre-heat the oven to 220 degrees celcius.

Use a big pan that has grid and pour 200ml under the duck in the pan.

Inside the duck add the salt, pepper, and ground cloves.

Then add salt to the outside as well with pepper and put it on the pan with the breast up.

Inside the duck add the rosemary and cut oranges.

Cook in the oven for 20 minutes.

Ingredients for the Orange Sauce:

  • 1 orange
  • 1 tbsp sugar free vanilla syrup
  • 1 tbsp sugar free maple syrup
  • Little water

Preparation:

Peel the orange and cut to small pieces and put it in a blender.

Then pour it in a pan and add the water and syrups and cook until it starts to thicken.

After 20 minutes set the oven to 170 degrees celcius.

Grease half of the duck with half of the orange sauce and put it back in the oven for 40 minutes.

After 40 minutes turn the duck and grease the other side with the orange sauce and cook for another 40 minutes.

Then turn the duck again with the breast up and cook for 20 minutes.

Put some more water in the pan if needed.

Cook the duck until it turns red.

When it’s ready take out the duck and cover it with aluminium foil and a dish towel and leave it for 20 minutes.

Ingredients for the Butter Sauce:

  • 1 orange juice
  • 2 tbsp butter
  • Drippings from the duck

Preparation:

In a pan start to cook the dippings and add the orange juice and butter.

When it starts to boil pour it in a bowl. Pour this on the duck when serving.

Ingredients for the Side Dish:

  • 3 celery
  • 1 celeriac
  • Butter
  • Green beans
  • Salt and Pepper

Preparation:

Cut the celeriac and celeries to small pieces and cook them in boiling water until they are soft.

Then put them in a blender.

Add salt, pepper and lots of butter.

Mix it together until it’s a puree.

Cut the ends off the green beans and cut them to 4 pieces.

Cook them in boiling water.

Then mix the beans with butter and salt.

When everything is ready cut the meat from the duck and put it on a plate.

Pour the butter sauce on the meat when serving.
