Egg cream soup

Ingredients: (this is for two people)

  • 6 eggs
  • 1 tbsp coconut cream
  • 1L water
  • Salt,Pepper
  • 1 chili pepper
  • Fresh coriander
  • Fresh Thai basil or normal basil if you don’t have
  • 1 small Thai lemongrass if you have
  • 1/4 tsp turmeric
  • 1/4 tsp ginger
  • 1/4 tsp red onion powder or garlic powder
  • 1/4 tsp red pepper
  • 1/2 lemon juice
  • 1 lime

Preparation:

Mix the dry spicies in a pan which you will use to cook and add 1L boiling water.

Add the fresh spicies and lemongrass. Crush the lemongrass with a knife before adding it.

Cook for five minutes.

Add the lemon juice and the coconut cream.

Stir well and wait until it starts to boil again.

When it’s boiling add the beaten eggs and stir with a fork while pouring the eggs.

Cook for another five minutes.

When it’s ready take out the lemongrass and mix in a blender until it’s creamy.

You can put some more chili in the top when serving and add the lime juice.
