Ingredients for the chicken:
- 3 chicken breast
- Oil
- Salt and Pepper
Preparation:
Cook the chicken breast in a little oil.
Put them on a pan and cover it with aluminium foil.
Cook in the oven for 20-30 minutes at 200 degrees celcius
Slice them on the top of the salad when serving.
Ingredients for the salad:
- 2 large roman salad
- 1 red pepper
- 200g cherry tomatoes
- Couple of capers
- 4-5 pickles
- 1 yellow chili
Preparation:
Cut the roman salad and put it in a bowl.
Add the cut pickles and capers.
Cut the red pepper to slices, cut the tomatoes in half and the chili to slices.
Before serving in a pan heat up oil and cook the peppers and tomatoes a little bit.
Ingredients for the dressing:
- 3 eggs
- 1 avocado
- Capers juice
- 1 lemon juice
- 1 clove of garlic
- Salt and Pepper
- 6-8 tbsp olive oil
- 1 tsp mustard
Preparation:
Put everything in a blender and mix together.
Pour it on the salad and stir everything together.
Sprinkle the salad with parmesan cheese when serving.
