Paleo Beef Stew

Ingredients

  • 800g beef
  • 200g mushroom
  • 150g green beans
  • 3 carrots
  • 2 sweet potatos
  • 1 red onion
  • 3 cloves of garlic
  • 150ml red wine
  • 1 tomato
  • 1 pepper
  • 2 bay leaves
  • 2tbsp capers
  • 1tsp marjoram
  • 1tsp cumin
  • Salt, pepper
  • Oil
  • 1tbsp tomato puree
  • 1-1.5 chicken stock

Preparation:

Cut the beef to pieces then peel and cut the vegetables.

In a big pan start to cook the cut onion on oil and add salt.

Add the crushed garlic and the meat and cook until it turns white.

Then add the cut tomato, red wine and all the spicies.

Stir well and pour in the chicken stock until it’s covered.

Cover it and cook for 1.5 hours.

Don’t stir it only move the pan sometimes.

After cooking for 1.5 hours add all the vegetables and check if you have to add more salt or spicies.

Leave for another hour to cook and keep it covered.

After cooking leave it to rest for ten minutes and it’s ready to serve.
