Paleo Jambalaya

Ingredients:

  • 8 fresh, not cooked, not dry Italian sausage
  • 400g frozen shrimp
  • 150g bacon
  • 1 red onion
  • 3 cloves of garlic
  • 200g cherry tomatoes
  • 2 green and red california pepper
  • 2 celery
  • 1 chili pepper
  • Half cauliflower
  • 50g quinoa
  • Chicken stock
  • 1 tomato puree
  • Salt and pepper
  • 1 tsp chili powder
  • 1 tsp smoked pepper powder
  • 1 tsp thyme
  • Fresh parsley
  • Oil

Preparation:

Put oil in a big pan.

Take out the meat from the sausages casings and form small balls then put them in the pan.

Add the bacon and start to cook.

Cut the red onion, crush the garlic and add to the meat.

Cut the peppers, chili and celery.

Don’t cut the cherry tomatoes.

When the meat is white add all the vegetables, tomato puree, all the spicies and half of the cut parsley.

Stir and pour in the chicken stock until it’s covered.

Cover it and cook slowly.

Grate the cauliflower in the food processor.

After one hour add the cauliflower rice and cook for an other 30 minutes.

Add the quinoa after half an hour and add more chicken stock if needed.

After another half an hour add the rest if the parsley and the frozen shrimps.

Cover it and cook for 10 minutes.

After cooking keep it covered for 15 more minutes.
