Ingredients:
- 1 cauliflower
- 100g butter
- 500g any kind of sea fish
- 100g smoked fish (if you have some / want to but you can leave this out)
- 1 red onion
- 3 bay leaves
- 3 clove
- 1 cup cream
- 1/2 cup milk
- 1 tsp mustard
- 200g cheddar cheese
- 1 pack of fresh parsley
- 200g fresh spinach
- 1/2 cup frozen peas
- Pinch of nutmeg
- Salt, pepper
Make cauliflower rice from the cauliflower:
Grate the cauliflower into smaller pieces.
Put oil in a pan and when it’s hot add the cauliflower rice and add salt.
Cook slowly for 15 minutes and add a little bit of water… about 100ml.
If it’s not soft yet add more water.
When it’s ready cover it and leave it for a while.
Fish Pie Preparation:
In a big pan put the butter and melt it.
Add the cut onion and the bay leaves and add a little bit if salt.
Cook for five minutes then add the cream, milk and the clove.
Stir it and cook slowly.
Cut the fish into piecies and put it in the cream sauce and cook for 10 minutes.
After 10 minutes take out the fish and put it in another cooking pan which you will use to cook.
Take out the bay leaves and cloves.
Add 1 and 1/2 cup of grated cheese, mustard and nutmeg.
If it’s too thick add more milk.
When the cheese is melted add the spinach and cook for 5 more minutes.
You can make the cauliflower rice like I did or you can also make cauliflower puree whichever you like better.
Pour the creamy spinach sauce on the fish.
Add the cauliflower rice or puree.
Sprinkle the top with grated cheese.
While doing this pre heat the oven to 200 degrees.
Don’t cover the pan and put it in the oven for 25-30 minutes.
When it’s ready leave it for 15 minutes.
