Ingredients:
- 1 cauliflower
- 1/2kg sea food
- 1kg chicken breast
- 100ml tomato puree
- 2-3 fresh tomatoes
- 1 red california pepper
- 1 red onion
- 2 cloves of garlic
- 100ml white wine
- 300ml chicken stock
- Salt and Pepper
- 1 tsp curcuma
- Olive oil
- Couple drops of stevia
- 1 lemon juice
- 1 chilli pepper (optional)
- 1 green onion
Preparation:
Cut the chicken breast to pieces.
In a big pot start to heat the oil and add the cut onion with salt.
After a couple minutes add the chicken breast.
When the chicken is white add the cut pepper, garlic, and tomatoes.
Cook for a couple minutes then add the spicies, wine, tomato puree and a couple drops of stevia.
Cook for 30 minutes and add a little bit of water if needed.
While this is cooking put the cauliflower in a blender.
When the chicken is half cooked add the cauliflower rice and cook for 10 more minutes.
Add more salt and water.
When it’s cooked add the sea food and cook in the oven for 10 minutes on 150 degrees Celcius.
Before serving add the lemon juice and sprinkle with green onion and chilli pepper.
