Stuffed Peppers with Cauliflower rice

Ingredients:

  • 4 California peppers
  • 1kg minced meat
  • 2 tomatoes
  • 1 red onion
  • 2 cloves garlic
  • Salt, pepper
  • Oil or fat
  • 1tsp marjoram, basil, oregano
  • 2tsp red paprika
  • Half cauliflower
  • 50g filed cheese

Preparation:

Cut the onion and start to cook with fat.

Add the meat and when it’s white add the cut tomatoes and crushed garlic, then put all the spicies in and cook slowly for five minutes.

Grate the cauliflower in a food processor and cook with the meat for 15 minutes.

Cut the tops off the peppers and take out the seeds.

Put baking paper on a pan, stuff the peppers, sprinkle with cheese and put on the top of the peppers.

Bake in the oven for 20 minutes at 180 degrees.

If you have any stuffing left cook in the oven for 40 minutes.

Ingredients for sauce:

  • 1 package of mascarpone
  • 100ml cream
  • Salt
  • Fresh basil
  • Sweetener
  • 1 cup tomatoes puree

In a pot start to heat up the mascarpone with the cream, add the tomato puree and the spicies. Cut the basil to small pieces then add it to the sauce and cook for a couple of minutes and it’s ready.

Put on the top of the peppers when serving.
