Ingredients:
- 1 butternut squash
- 2 carrots
- 1 sweet potato
- 1 red onion
- 1tbsp butter and olive oil
- Salt and pepper
- 1/2 tsp ginger powder
- 1tsp pumpkin spice
- Stevia
- 1 can coconut milk
- 50g coconut chips
- Balsamic vinegar

Peel the vegetables, take out the pumpkin seeds and cut the vegetables.
Put the butter and the olive oil in a pan. When the butter is melted add the chopped onion and salt.
Cook for five minutes.
Add all the vegetables and cook for another five minutes.
Add all the spices and a little bit of stevia.
Add water until everything else is covered and cook for 30 minutes.
Fry the coconut chips in a pan.
When the soup is cooked blend it with a hand blender / mixer or use a blender until it’s smooth then add the coconut milk and it’s ready.
Put the coconut chips and the balsamic vinegar on top when serving.
