Fake Peking Duck

Ingredients for the duck:

  • 2kg duck
  • Salt and Pepper
  • Olive oil

Preparation:

Wash the duck and let it dry.

Wipe it with a paper towel.

Put salt and pepper on the duck.

Put it in a baking pan with a gridded rack and sprinkle with oil.

Put a small cup of water on the bottom of the pan.

Cover it with double aluminum foil.

Cook in the oven for 2 hours at 160 degrees Celcius.

Take off the foil and cook for 15 more minutes on both sides of the duck at 200 degrees Celcius.

Ingredients for the sauce:

  • 200ml sugar-free soy sauce
  • 100ml sugar-free maple syrup
  • Stevia
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ginger powder

Preparation:

Put everything in a pan and boil together for 3 minutes.

Grease both sides of the duck with this sauce and put it in the oven for 5 minutes.

When the duck is cooked put it on a cutting board and cover it with aluminium foil and a dishtowel for 30 minutes.

Cut the duck meat to thin slices.

I made egg pancakes while the duck is cooking.

You need 12 pancakes.

Ingredients for the vegetables:

  • 1 cucumber
  • 2 pack of green onions
  • 1 red California pepper
  • Lettuce
  • 1 red chili pepper

Preparation:

Cut the vegetables to very thin slices.

When serving put the meat and the vegetables in the pancake.

Sprinkle with the sauce that you used for the duck.

Roll the pancake and it’s ready.
