Ingredients for the pastry:
- 3 cups almond flour
- 2/3 cup blueberry
- Sweetener
- Vanilla extract
- Pinch of salt
- 1 tsp baking powder
- 50g butter
- 1 grated lemon peel
- 1 egg
Preparation:
Pre-heat the oven to 180 degrees celcius.
In a bowl add all the ingredients and the melted butter.
Mix everything together.
Then put the pastry on baking paper and stretch it out to a circle with your hands to around 1 cm thick.
You can add the blueberries before or after stretching out the pastry.
Put it in a pan and cut it to eight pieces.
Separate the slices a little bit so they do not stick together when baking.
Bake in the oven for 18-20 minutes.
Leave it cool down then pour the lemon sauce on the top.
Ingredients for the Lemon Sauce:
- 2-3 tbsp granulated sweetener
- 1 tbsp lemon juice
- 1 tbsp cream
Preparation:
Put everything in a bowl and mix them together.
Pour it in a smaller nylon bag.
Make a small cut on the bag and pour the sauce on the scones when they are cooled down.
