Ingredients:
- 1/2kg chicken breast
- 1 tbsp butter or olive oil
- 1 red onion
- 2 cloves of garlic
- 1 red California pepper
- 2 carrots
- 2 white carrots
- 1 smaller swedes
- 2 sweet potatoes
- 1 chilli pepper
- 1 tsp red pepper
- Salt and Pepper
- 2L chicken stock
- 1 tsp ground cumin
- 1 tsp csombor?
- 1 tsp marjoram
- 1 pack of coriander
- 3 tsp arrowroot powder
- 100ml cream
- 100g cream cheese
- 100g grated cheese
- 1 lemon juice
Preparation:
Cut the meat and all the vegetables into smaller pieces.
In a big pan start to cook the butter or oil and add the onion with salt.
Then add the crushed garlic and the meat and cook until the meat turns white.
Add the vegetables, spicies and chicken stock.
Cook for one hour or until all the vegetables are soft.
Take a little bit of chicken stock from the pan and mix it with the cream cheese and the grated cheese then pour it back to the big pan.
Add the lemon juice.
Mix the arrowroot powder with the cream and add to the soup.
When it’s cooked add the fresh coriander and cover it.
Leave it to rest for a while before serving.
