Cauliflower Sushi

Ingredients for the cauliflower rice:

  • 1 medium cauliflower
  • 1/2 cup rice vinegar
  • 2 tbsp stevia
  • Pinch of salt
  • Coconut oil

Preparation:

Mix the rice vinegar, salt, and stevia.

Cut the cauliflower to pieces and put it in a food processor to grate it.

In a pan heat up coconut oil.

Add the grated cauliflower, cover it and cook slowly for ten minutes.

After ten minutes pour in the vinegar and cook for another ten minutes.

Put it on the side for an hour and cover it.

Then take off the cover and leave for another 2-3 hours.

It has to be cold when you make the sushi.

Cut the ingredients for the fillings.

I used tuna and salmon.

Ingredients for the filling:

  • 1 tuna can
  • 150g sliced salmon
  • 1 avocado
  • 1 pack green onion
  • 1 cucumber
  • 1 red california pepper
  • 1 bigger carrot
  • Half lemon
  • 2 tbsp mayo

Preparation:

Pour the liquid from the tuna and press it with a fork.

Add salt, pepper, and mayo and mix together.

Cut the vegetables to equal sizes.

After cutting the avocado add lemon juice to it.

Other ingredients you need:

  • Nori sheet
  • Wasabi
  • White and black sesame seeds
  • Soy sauce

Preparation:

Put water in a small bowl.

On a bamboo mat put the nori sheet with the shiny side on the bottom.

Add the cauliflower rice and add everything else on top of that.

Start to roll up with the bamboo roll and make sure it’s pressed together.

Put water on the other end so it sticks.

Put the rolls in the fridge for an hour before cutting them.

When cutting slices cut the edges first.

Then cut it in the middle and cut again until you have 8 pieces from one roll.

When serving you can sprinkle with sesame seeds, or use soy sauce and wasabi.
