Chicken Breast with Spinach and Cauliflower Puree

Ingredients:

  • 1kg chicken breast
  • 100g spinach
  • 1 cauliflower
  • Salt and Pepper
  • Chicken seasoning
  • Olive oil
  • Butter
  • 2 cloves of garlic
  • Coconut milk

Preparation:

Cut the chicken breast in half.

Pour a little bit of olive oil in a pan and cook the chicken breasts.

Then put the chicken breast in a pan that you will use for cooking in the oven.

After cooking add the seasoning to the meat.

Cook the spinach in the same pan you cooked the chicken.

Put the spinach in a blender with garlic, butter, olive oil, salt and pepper and mix them together.

Cut the cauliflower to smaller pieces and put it in boiling saltwater.

When the cauliflower is soft add to the blender with the coconut milk and blend together with the spinach.

Then add this to the pan on top of the chicken breast.

Put it in the oven to cook for 20 minutes at 180 degrees Celcius.
