Ingredients for pastry:
- 200g any kind of ground nuts
- 50g butter
- 1 egg
Ingredients for the cream cheese:
- 2x500g mascarpone
- 1 x 200ml sour cream
- Stevia
- Vanilla sugar
- 80g starch or arrowroot flour
- 1 grated lemon peel
- 8 eggs
- Pinch of salt

All the ingredients should be room temperature.
Preheat the oven to 160 degrees Celcius with convection.
Put water in a bowl and put it on the bottom of the oven.
This cake has to be baked in a large cake pan. I used a 26cm cake pan for this.
Mix the grated nuts with the melted butter and egg.
Put baking paper in the cake pan and add the nuts to form a base.
Bake for ten minutes.
For the cream cheese mix everything together in a bowl except the eggs and the starch.
Mix it with a blender and add the eggs slowly and add the starch in the end.
Pour in the cake pan and bake for an hour.
When it’s done let it cool down.
I made red berry topping for this cake and put whipped cream on the top when serving.
Ingredients for the topping:
- 750g frozen berries
- Little bit of water
- Stevia
Cook everything together slowly for 20 minutes and it’s ready.
