Bake in a 22cm round cake pan
Ingredients:
- 4 eggs
- 2tsp vanilla aroma
- Stevia
- 100ml sugar free maple syrup
- Salt
- 2tsp pumpkin spice
- 1tsp nutmeg
- 2 cups almond flour
- 2tbsp coconut flour
- 1tsp cream of tartar or bicarbonate of soda
- 1 pack of baking powder
- 2 cups of filed carrots
- 1/3 cup olive oil
- 80g butter
- 1/2 cup walnuts
- 2 oranges
- 500g mascarpone or cream cheese
- 50g butter
- 1/3 cup whipped cream
Instructions:
Pre heat the oven to 180 degrees.
Put baking paper on the bottom of the cake pan.
Grate the carrots and cut the walnuts.
Melt the butter.
Put the dry ingredients and the wet ingredients in different bowls. Then mix them together and add the carrot and the walnut.
Put the dough in the cake pan and make it level.
Bake in the oven for 45 minutes then leave it to cool down.
While it cools down I make the orange jam.
Peel the oranges and cut them to small pieces. Put them in a pan add 2-3 tsp water. Add a pinch of salt, stevia, 2tsp maple syrup, and 1/2 tsp pumpkin spice then cook slowly for 10-15min. Once cooked leave this to cool down as well.
When the caked cooled down I make the mascarpone cream.
Put the butter in a bowl with the cream cheese, stevia and vanilla aroma and mix with blender then add the whipping cream.
When it’s ready you can fill the cake.
Cut the cake in half, put half of the the cream in the middle and then add the jam and the cut walnuts.
Put the rest of the cream on the outside of the cake and sprinkle with minced walnut.
Leave it in the fridge for one night.
