Ingredients for the eggs for two people:
- 4 eggs
- Butter
- Salt and Pepper
Ingredients for the sauce:
- 85g butter
- 2 egg yolks
- 1 tbsp water
- 1 tbsp lemon juice
- Salt and Pepper
- 1 tsp chili pepper (optional)
In the original recipe, you have to use bread but I make keto mug bread.
For vegetables, I use avocado and tomato.
When the bread cools down cut it in half and put the bacon on the top with the vegetables and then add the egg and pour the sauce on the top of it.
Eggs Preparation:
Boil the eggs for 3 minutes and 30 seconds and put vinegar in the water.
Preparation of the Sauce:
Melt the butter in the microwave and let it cool down a little bit.
In a large heatproof bowl add boiled water.
In another bowl put the egg yolks with the 1 tbsp water.
Place the bowl over a saucepan of simmering water.
Cook slowly and keep stirring for a couple of minutes until it’s creamy.
After cooking add the butter.
Add the lemon juice, salt, pepper, and chilli.
Pour it on the boiled eggs when serving.
