Ingredients for the pastry:
- 20cm cake pan
- 150g ground walnut
- 20g sweetener
- 30g coconut oil
- 1 egg yolk
Ingredients for the lemon filling:
- 2 grated lemon peel
- 2 lemon juice
- 130g sweetener
- 70ml coconut milk
- 2 eggs
- 2 egg yolks
Preparation:
Mix the walnut with the coconut oil, sweetener and egg yolk.
Put baking paper in a cake pan and add in the pastry.
It should be 4cm high on the sides.
Put it in the fridge until you make the filling.
For the filling put everything in a blender and mix it together.
Pour on the pastry.
Cook in the oven for 30 minutes on 160 degrees Celcius or until the cream starts to go brown.
Leave it to cool down and put it in the fridge until serving.
