Keto Hungarian Stuffed Peppers

Ingredients:

  • 10 peppers (if you don’t have Hungarian peppers use red california peppers)
  • 1kg minced pork
  • Salt and Pepper
  • 2-3 tbsp olive oil or fat
  • 2 tsp red pepper powder
  • 500ml tomato puree
  • 3 eggs
  • 1 smaller red onion
  • 2 cloves garlic
  • 2 tbsp arrowroot powder
  • Stevia

Take out the seeds from the peppers and wash them.

Mix the meat with the cut red onion, crushed garlic, salt, pepper, red pepper powder, eggs and oil.

Stir everything together.

In a big pan start to cook the tomato puree and add the same amount of water as the puree.

Add salt, pepper, and stevia.

While it is cooking stuff the peppers with the meat mixture.

Then put them in the pot with the puree and cook for one hour.

Make balls from the rest of the meat and boil them in salty water.

Cook them a little while then add to the peppers to cook together.

Instead of potatoes, I made this with celeriac.

Cut the celeriac and cook in saltwater.

When it’s soft put it in a blender until it’s creamy.

Mix it with butter.

When the peppers are cooked take some liquid from the puree and mix in a blender with arrowroot powder then pour it back and cook for a minute and it’s ready.
