Keto Tiramisu Cake

Ingredients:

  • 500g mascarpone
  • 60ml cream
  • 5 egg yolks
  • 160g sweetener, liquid and powder
  • 1 tsp vanilla aroma
  • 160g gelatine powder with 100ml water
  • 300ml coffee
  • Cocoa powder for the top
  • Keto Ladyfingers
  • 28cm cake pan

Preparation:

Add 5 tbsp powdered sweetener to the egg yolks and mix them.

Place the egg yolks mix in a bowl over a saucepan of simmering water and cook for about 10 minutes then let it cool down.

Mix the gelatine with the water and leave it until you make the cream.

The mascarpone should be room temperature.

Mix the mascarpone with vanilla aroma, liquid sweetener, and a pinch of salt and mix together with a blender.

Beat the cream to whipped cream.

When everything is ready, add the rest of the water to the gelatine and put it in the microwave for 1 minute.

Add the cold egg yolks to the mascarpone and mix them together and add the gelatine as well.

Then add the whipped cream slowly to the mascarpone cream.

On the bottom of the cake pan put ladyfingers dipped in coffee then one layer of cream.

Then ladyfingers again and cream.

Leave a little bit of cream for decoration.

Make the top cream even and decorate it with the rest of the cream.

Sprinkle the top of the cake with cocoa powder.

Put it in the fridge for one night.
