Ingredients:
- 100g minced walnut
- 100g whole walnut
- 2 eggs
- pinch of salt
- 200g butter
- Stevia
- Half lemon zest and juice
- app. 100g almond flour
- 1 tsp cinnamon
- Half pack of backing powder
- Vanilla exract
- 1 tsp psyllium husk
- 1/2 tsp cream of tartar
Melt the butter and mix in the eggs, stevia, salt, cinnamon, lemon in a bowl with the butter.
Add the minced walnut and the almond flour to the bowl from above and mix (Add almond flour until the texture is soft but mouldable.) Then add the psyllium husk, baking powder and cream of tartar. If you don’t have cream of tartar that’s still fine.
Put it in the fridge for 10 minutes and heat the oven with convection to 160 celsius.
Put baking paper in a flat sheet and with wet hands I make balls from the dough. After I put the whole nuts on top of the biscuits and I bake them for around 15 minutes and it’s done.
It was even more delicious the next day. Hope you will enjoy it.
