Mushroom Soup

Ingredients:

  • 500g sliced mushroom
  • Salt and Pepper
  • Beef stock
  • Tarragon
  • 1 lemon juice
  • 200ml cream
  • 1 red onion
  • Garlic
  • 100g quinoa
  • 1 sausage
  • Red pepper powder
  • 1 chilli pepper
  • Coriander

Preparation:

Cut the onion and start to cook with oil.

Add the mushrooms and after a couple of minutes add the sliced sausage and the crushed garlic.

Cook until the fat starts to come out from the sausage.

Add the salt, pepper, red pepper and chilli.

Add the beef stock until it’s covered.

When it starts to boil add the quinoa and cook slowly.

After 15 minutes add the cream and when it starts to boil stop cooking.

Add the lemon juice and the coriander.

Cover it for ten minutes.
