Keto Mini Cake for Women’s Day

Strawberry Mascarpone Mini Cake

Ingredients for 3 sponge:

  • 4 eggs
  • 4 tbsp almond flour
  • Pinch of salt
  • Vanilla extract
  • Sweetener
  • 1/2 tsp baking powder
  • 1/2 tsp cream of tartar

Preparation:

Put baking paper in the small pans and grease the sides with butter.

Preheat the oven to 180 degrees Celcius with convection.

Separate the eggs and add the cream of tartar to the egg whites and beat them with a blender.

Add the sweetener and the vanilla extract to the egg yolks and beat these too.

Then add the almond flour and baking powder to the yolks and mix them.

Add half of the egg whites and stir together then add the rest and keep stirring carefully.

Pour them in the cake pans and bake for 15 minutes.

Take it out from the oven and let it cool down.

Ingredients for the cream:

  • 50g 85% dark chocolate
  • 100g strawberry
  • 200g mascarpone
  • 200ml cream
  • 25g butter
  • Sweetener
  • Vanilla extract
  • 2 tbsp strawberry syrup
  • 2 tbsp gelatine

Preparation:

Put the chocolate in a heatproof bowl.

Place bowl over a saucepan of simmering water.

Put the butter, cream and mascarpone in separate bowls.

Beat the cream into whipped cream.

Stir the mascarpone and the butter.

Mix these together and add the sweetener and vanilla extract.

Put half of the cream in another bowl.

Add the melted chocolate to one of the bowls of cream and mix together.

Put the strawberries in a blender and then add them to the other bowl of cream and add two tbsp of sugar-free strawberry syrup.

Then add the gelatine to the cream and mix them together.

First cut the sponge in half if it’s too big.

Then add the chocolate cream layer and then the strawberry layer.

Ingredients for the gelatine:

  • 1 pack pf gelatine
  • 2 tbsp sweetener
  • 300ml cold water

Preparation:

Put the gelatine, water and sweetener in a pan.

I used a granulated sweetener for the gelatine.

Cook slowly until it starts to thicken.

Decorate the top of the cake with strawberry and pour the gelatine on the top.

Put it in the fridge for a couple of hours or for one night.
